Season the meat with salt and pepper and set aside.
In a large Dutch oven or heavy bottomed pot, apply medium-high heat and add the oil. Place the meat on the bottom of the pot and cook until evenly browned on both sides.
Stir in the onions and cook until soft and tender while stirring occasionally. Add the tomatoes and pour with enough stock or broth to cover the meat completely. Cover with lid, bring to a boil and reduce to low heat. Simmer for about an hour or until the meat is thoroughly cooked and tender.
Add in the rest of the ingredients, cover with lid and cook until the vegetables are soft and tender. Season with salt and black pepper, transfer it into individual serving bowls and serve warm with radish and lime.
