grass fed beef skirt steak,cut into 4 equal portions
Salt and crushed black peppercorns,as needed
virgin olive oil
medium stem of spring onions,for serving
precooked corn tortillas,for serving
For the Marinade:
large green jalapeños,roasted
large red tomato,cored and cut into quarters
crushed black pepper
loosely packed fresh cilantro leaves
of rice wine or mirin
Season the meat with salt and pepper, drizzle with oil and rub evenly on all sides. Set aside.
Preheat the oven to 400°F and position the rack 10 inches away from the heat source. Place the jalapenos on a greased baking sheet and broil it in the oven until nicely charred on all sides. Remove from the oven, transfer to a bowl and cover with plastic wrap. Let it rest to cool for about 5 minutes and remove the skin and seeds.
Place it in a food processor together with rest of the marinade ingredients and pulse until thick and smooth. Season to taste with salt and pepper and transfer to a large non-reactive bowl. Add the meat, toss to evenly coat with the marinade mixture and cover with plastic wrap. Chill for at least 6 to 12 hours.
Remove the meat from the fridge and lightly brush with oil before grilling. Preheat gas or charcoal grill to high, reduce to medium heat and lightly brush the grids with oil.
Grill the meat on separate batches for about 5 minutes on each side, or until nicely seared on both sides and cooked through. Remove from the grill, transfer to a platter and grill the remaining meat until cooked through. You can also brush the meat with marinade to add flavor while grilling it.
Place it on a serving platter, cover with foil and let it rest to cool and to allow the juices to penetrate back into the meat. Remove the foil, transfer to a cutting board and slice the meat across the grain into ½-inch thick pieces. Transfer to a serving platter, top with spring onions and serve with warm tortillas if desired.
