Cherries Jubilee

lemon
1lb
fresh ripe black cherries
1/3cup
golden rum
1pt
vanilla ice cream
1/2cup
sugar

Steps

  1. Divide the ice cream into 4 and place in the serving bowls, put this into the freezer while you prepare the cherries.
  2. Clean and destone the cherries, add to a frying pan with the sugar and lemon zest.
  3. Next squeeze in the lemon juice and mix together, cook for 5 minutes with a lid on.
  4. Take off the lid and cook for a further 5 minutes.
  5. Now pull the pan to one side, add the rum and light being careful.
  6. Swirl around for ½ minute and spoon over the ice cream.
  7. Dish up.
