fresh ripe black cherries

golden rum

vanilla ice cream

sugar
Steps
Divide the ice cream into 4 and place in the serving bowls, put this into the freezer while you prepare the cherries.
Clean and destone the cherries, add to a frying pan with the sugar and lemon zest.
Next squeeze in the lemon juice and mix together, cook for 5 minutes with a lid on.
Take off the lid and cook for a further 5 minutes.
Now pull the pan to one side, add the rum and light being careful.
Swirl around for ½ minute and spoon over the ice cream.
