Cock a Leekie Soup

medium whole chicken,uncooked
1tsp
brown sugar
14oz
leek,washed and chopped
3
rashers streaky bacon,sliced into strips
6oz
prunes,cooked and destoned
1/2bunch
fresh parsley for garnish

Steps

  1. Add the chicken, whole to a pot, cover with the stock and boil for 60 minutes, while cooking skim off any scum from the top.
  2. Now drop in the leeks and cook on low for another 30 minutes.
  3. Remove the chicken and take off the bones, then add the meat back into the soup.
  4. Place in the rice, bacon and prunes cooking for another 30 minutes.
  5. Dish up and enjoy with crusty bread.
