small green pepper,
deseeded and diced

butter

milk

lb
carrots,
peeled and diced
Seasoning to taste
2
medium potatoes,
peeled and diced
4
oz
cheddar cheese,
grated, for serving
1
medium onion,
sliced
2
oz
lentils
1 ½
oz
flour
Steps
Dissolve the butter in a pot and when hot fry the peppers, carrots, potatoes and onions until tender.
Now add ¾pt of water, seasoning, bay leaf and lentils, cook this for 30 minutes on low.
Meanwhile dissolve the flour in a little milk, then slowly add the rest.
Pour this into the soup and allow it to thicken, after 5 minutes add 30oz of the cheese.
Divide into the serving bowls and finish with the remaining cheese.
Dish up hot.
