Country Vegetable Soup

bay leaf

small green pepper,deseeded and diced
1oz
butter
3/4pt
milk
1lb
carrots,peeled and diced
Seasoning to taste
2
medium potatoes,peeled and diced
4oz
cheddar cheese,grated, for serving
1
medium onion,sliced
2oz
lentils
1 ½oz
flour

Steps

  1. Dissolve the butter in a pot and when hot fry the peppers, carrots, potatoes and onions until tender.
  2. Now add ¾pt of water, seasoning, bay leaf and lentils, cook this for 30 minutes on low.
  3. Meanwhile dissolve the flour in a little milk, then slowly add the rest.
  4. Pour this into the soup and allow it to thicken, after 5 minutes add 30oz of the cheese.
  5. Divide into the serving bowls and finish with the remaining cheese.
  6. Dish up hot.
