fresh halibut or red snapper fillets,skinless and boneless
Salt and pepper,to taste
loosely packed fresh cilantro,finely chopped
green onion, thinly sliced for serving
green chillies,Sliced for serving
Extra lime wedges,for serving (optional)
For the Marinade:
green jalapeno pepper,seeded and thinly sliced
red hot chili peppers,thinly sliced
small yellow sweet pepper,seeded and finely minced
small red sweet pepper,seeded and finely minced
Cut the fish fillets into small dices, place it on a non-reactive bowl and season to taste with salt and pepper. Squeeze one lime over the fish, gently toss to combine and transfer to a colander or strainer to drain excess liquid.
Mix all marinade ingredients in a separate non-reactive bowl and mix until well combined. Set aside. Add the fish into the bowl and gently toss to evenly coat with marinade mixture. Cover and chill for at least 2 to 4 hours.
Add the oil and cilantro into the mixture just before serving and gently toss until well combined. Adjust seasonings if desired and transfer into small serving bowls or appetizer plates. Top with spring onions and serve immediately with extra lime wedges and chillies on the sides.
