For the Fruit Salad:
canned pineapple chunks,drained
Add all dressing ingredients in a small bowl and whisk until smooth and well combined. Season it with salt, pepper and ancho powder and mix to combine and set aside.
In large serving bowl, add all salad ingredients and gently mix to combine. Place half of the dressing in sauce bowl, drizzle the remaining half on top of the salad and serve immediately. Sprinkle with more salt, pepper and ancho powder if desired.
