Mix the melted butter and garlic in a small bowl and brush it on both sides of the bread. Apply medium-high heat on a skillet and toast the bread in separate batches until lightly golden. Transfer into two serving plates and set aside.
In a separate bowl, add the eggs and chives and whisk until well combined. Add the butter in a medium non-stick skillet, apply medium heat and melt the butter. Pour in the egg mixture and swirl to evenly coat the bottom of the pan and sprinkle with salt on top.
Briefly stir the mixture and cook until the bottom is set and the top is still runny. Remove from heat, stir in the cheese and gently stir just until the ingredients are well incorporated.
Place the egg mixture on top of the bread and garnish with extra chives, if desired before serving.
