Preheat an oven to 350 °F and lightly grease a rimmed baking pan with oil or butter. Set aside. Remove and unroll the crescent rolls from the can or package.
With a hand mixer, beat the butter and sugar in a mixing bowl until fluffy and stir in the vanilla extract. Beat further until smooth and well incorporated.
Place one crescent roll on a floured work surface, one at a time and roll out into the size of baking pan. Place it on the baking pan and press down to fill empty space on the sides and bottom part. Add the cream cheese mixture and spread evenly on top using a spatula. Cover with remaining crescent roll and lightly press down the sides to seal the edges.
In a separate mixing bowl, add all ingredients for the topping and whisk until well incorporated. Spread the mixture evenly on top of the cheesecake and bake it in the oven for about 25 to 30 minutes, or until golden brown and puffy.
Remove from the oven, transfer to a wire rack and let it rest to cool completely for about 10 minutes before cutting into bars. Drizzle with honey and serve immediately.
