Stilton and Warm Mushroom

large shallots

sherry wine vinegar,
plus 2 tsp sherry wine vinegar

pancetta

olive oil

lettuce mix

chanterelle mushrooms
Seasoning to taste

stilton cheese
Steps
Cut the shallots into slices, and dice the pancetta.
Next clean the mushrooms and slice ½ thick slices from them, now crumble the cheese.
Add 2tbs oil to a frying pan and heat, fry the shallots with the pancetta for about 4-5 minutes.
Once they begin to color add another 2tbs of oil and drop in the mushrooms with seasoning.
Cook for 5 minutes before putting in the 1tbs wine vinegar, cook until it reduced, stirring all the time.
Take off the heat.
Place the lettuce in a wide open serving bowl, mix together with 2tbs oil, 2 tsp vinegar, and season, mix well.
Place the mushrooms over the top with the cheese and dish up.
